Afia Efere, meaning 'white soup' in Efik, is one of the crown jewels of Cross River cuisine. Unlike Nigeria's tomato- and palm-oil-based soups, Afia Efere gets its pale, creamy body from pounded yam stirred right into the broth, and its unmistakable aroma from uyayak (aidan fruit / Tetrapleura tetraptera). Loaded with goat meat, snails, stockfish and dried prawns, it's the celebration soup of the Efik and Ibibio people — served at weddings, naming ceremonies and Sunday family gatherings.
