Coconut Asaro (Yam Pottage) — Nigerian rice & grains recipe

Coconut Asaro is a delicious twist on the classic Yoruba comfort food. Chunks of yam soften in a fragrant pepper base brightened with coconut milk, then are gently mashed until part-creamy, part-chunky. The coconut milk rounds out the heat from the scotch bonnets and adds a subtle sweetness that pairs beautifully with crayfish, thyme and red palm oil.
