Egusi Ijebu is the South-West's smoother, silkier take on classic egusi soup. Instead of frying loose egusi lumps, the melon seeds are first toasted for a deep nutty flavour, then blended smooth with tatashe, crayfish and ogiri ijebu into a velvety pepper base. Simmered in palm oil and finished with smoked catfish, it's the definitive Ijebu swallow companion — perfect with pounded yam, eba or semovita.
