Efo Riro — literally 'stirred vegetable' — is the crown of Yoruba cooking: a bold, oil-floated stew built on roughly blended tatashe, locust beans and a generous pile of leafy greens like soko and tete. Loaded with goat meat, shaki, ponmo, snails and smoked catfish, it's the kind of soup served on Sunday afternoons and at every serious Owanbe. Serve it with pounded yam, eba, semovita, or a bowl of white rice.
