Nkwobi — Nigerian small chops recipe

Nkwobi is the pride of Igbo pepper-soup joints and bar rooms — tender chunks of cow leg tossed in a thick, bright-orange palm oil paste seasoned with ehuru, chilli and crayfish, then finished with ugba (fermented oil bean) and bitter-fresh utazi leaves. It's traditionally served in a small wooden mortar with a cold drink, and eaten slowly with the fingers. This is the authentic buka-style recipe.
