Moi Moi (Steamed Bean Pudding)

A soft, savoury steamed bean pudding packed with peppers, onions and protein — a Nigerian party staple.

Moi Moi is one of Nigeria's most beloved dishes — a soft, savoury steamed pudding made from peeled black-eyed peas blended with peppers, onions and spices. It's the classic sidekick to Jollof Rice at parties, and just as delicious on its own with a cold drink. Wrapped in banana leaves or foil, each parcel is moist, fragrant and comforting.

Ingredients

Serves 6

  • 2 cups black-eyed peas or honey beans
  • 1 red bell pepper (tatashe)
  • 2 scotch bonnet peppers
  • 1 medium onion
  • 1/4 cup vegetable oil
  • 1 tablespoon chicken bouillon powder
  • 1 teaspoon salt
  • 1/2 teaspoon ground crayfish
  • 2 boiled eggs (sliced)
  • 1 tin sardines or smoked fish (optional)
  • Banana leaves or foil for wrapping

Method

    Soak beans in water for 15-20 minutes, then rub between your palms to remove the skins. Rinse repeatedly until the skins are washed away.

    Blend the peeled beans with red bell pepper, scotch bonnet, onion and a little water until smooth and fluffy.

    Pour the blended batter into a bowl and whisk in vegetable oil, bouillon powder, salt and crayfish.

Chef tips

  • The fluffier the batter, the lighter the Moi Moi — blend with minimal water and whisk well.
  • Banana leaves add a subtle earthy aroma that foil can't replicate.
  • Don't let the steaming water touch the wraps; keep the pot covered tightly.

    Fold in sliced boiled eggs and flaked fish if using.

    Spoon the mixture into banana leaf wraps, foil pouches or ramekins.

    Steam over simmering water for 45-60 minutes until set and a skewer inserted comes out clean.

    Allow to cool slightly before serving.

Serving Suggestions

Serve with Jollof Rice, fried plantain, garri or custard.

Yes — bean flour (or peeled beans powder) saves time. Just mix with the blended peppers and spices.
